Matcha is the only tea used in chado, the traditional tea ceremony.
Matcha is made from shaded tea leaves that are grown in the same way as that of gyokuro.
The fresh leaves are steamed and then dried without rolling, this is called Tencha.
Tencha is then grinded in a stone mill or ball grain grainer into powder to make Matcha.
The deep green powder (High grade Matcha) can be added directly to water,
where it needs to be whisked with a bamboo chasen (whisk) until frothy.
